Apple Pie

Here I have a beautiful recipe for a hi rise apple pie, it is so hearty and tastes absolutely beautiful. It has always been a winner for me and when I made it for the first time it came out perfectly! It is all made from scratch and the pastry is all home made. A wonderful way to fill the house with a sweet aroma and the perfect way to get to your mans heart! ENJOY!

This serves roughly 8 people depending on how big or small you cut the pie

Oven temperatures, 220 degrees celcius or 425 degrees farenheight  (depending where in the world you are)

Pastry Ingredients

  • 3 cups/375grams/12oz or sifted plain flour
  • 1 tablespoon of sifted icing sugar
  • 185 grams/6oz of chilled butter
  • 1/2 a cup of iced water (water cold from the fridge)
  • 1 egg white that has been lightly beaten
  • caster sugar

Apple Filling

  • 6 large cooking apples, cored, peeled and sliced
  • 1/2 a teaspoon of of ground cinnamon
  • 2 tablespoons of plain flour
  • 4 tablespoons of sugar
  • 30 grams/1oz of butter cut into small pieces

How to make your hi rise apple pie

(Step 1) Making the pastry

  • Place the flour and icing sugar into a large mixing bowl, and mix to combine.
  • Rub in the butter using your fingertips until the mixture resembles coarse bread crumbs
  • Mix in enough water to form a nice firm dough
  • Turn the dough onto a lightly floured surface and kneed lightly until smooth
  • Wrap the pastry in plastic food wrap and place it in the fridge for half an hour

(Step 2)

  • Roll out three quarters of the pastry on a lightly floured surface and line the base and sides of a deep lightly greased 20cm/8inch pie dish
  • Trim the edges with a sharp knife

(Step 3) Making the filling

  • To make the filling place the the apple slices, cinnamon, flour and sugar in a mixing bowl and mix to combine
  • Arrange apple mixture over the pie base shaping the apples into to  form a dome in the centre
  • Dot with butter

(Step 4)

  • Roll out the remaining pastry on a lightly floured surface large enough to cover the pie
  • Brush the edge of the pastry with water and cover with pastry top
  • press the edges together to seal, trim and make decorative using your fingertips
  • Make 2 slits in the top of the pie to let the steam out when baking
  • Brush the top of the pie with egg white and sprinkle with castor sugar

Bake for 20 minutes then reduce the oven temperature to 180 degrees celcius/350 degrees farenheight and cook for a further 40 to 45 minutes or until the apples are tender when tested with a skewer.

NOTE: Sometimes the edges of the pie may burn so keep and eye on it and test the apples they may be soft enough to take the pie out and prevent further burning.
